Cookies with Honey!

Last night, while watching 24 (our Monday night tradition) ... I was fighting a migrane. It finally went away at about 9 o'clock and I was thrilled! For some reason - I was craving chocolate chip cookies. Warm, chocolate chip cookies!! Mmmm... so... I began mixing up the ingredients...

Soon to discover we were OUT of eggs. Oops!! I haven't gotten to the grocery store yet this week and so Josh and I goggled a recipe without eggs.

The suggested substitute? HONEY. Me and my honey made choc chip cookies with honey.

The result was not bad at all. They were a little more "gooey" because of the Honey texture. Here is the recipe I found and modified:

CHOCOLATE CHIP COOKIES
(Taken from Mrs Field's Cookie Book)
Yield: 15 cookies

1 1/4 cup all purpose flour
1/2 tsp. baking soda
1/8 tsp.salt
1 stick salted butter
1 cup white sugar
1/2 cup honey
milk chocolate chips

Preheat oven to 300 degrees F.

In a small bowl combine flour, baking soda and salt. Mix well and set aside.

In another medium bowl blend butter, sugar and honey with an electric mixer at medium speed.Beat till light and soft, then scrape sides of bowl. Add flour mixture and chocolate chips, blend at low speed just till combined. Do not over mix.Drop dough by rounded teaspoonfuls onto ungreased cookie sheets, 1 1/2 inches apart.

Bake 18-20 minutes or til light golden brown. Immediately transfer cookies to a cool, flat surface.

Mmmmm! That face+warm cookies & milk = love!

I've made cookies without eggs before too! They turned out a little crumbly, but not that bad. 24??? I love that show, but I've missed the past two episodes :( I'll have to catch them on Hulu.

Oh my, these sound fabulous! I've never even thought to make cookies without eggs before. I would say that I'll try these the next time that I want cookies and I'm out of eggs, except that I don't think that I'm going to wait until I run out of eggs. They just look so good!
